Summer is winding down but it’s still extremely hot here in Southern California (it was 115 yesterday …yeah, it’s H-O-T). Even though the temperature might not reflect it, summer is coming to an end –but I’m not ready to completely let these lazy summer days go. I’m holding on a little bit longer while sipping this Seagram’s Escapes cocktail!
This is the last weekend before school is in full swing for both of our girls, so we set up for light and refreshing pre-dinner sips & salads this weekend (just for us grown ups). I get really happy when summer rolls around and have been known to find reasons to entertain just so I could create a fun, refreshing cocktail. So when PAMA asked if I wanted to collaborate and create a summer cocktail I jumped at the chance.
I had never used pomegranate liqueur before but it will be one of my go-to’s from now on. It has a sweet, yet tart taste and a great ruby color. PAMA is made with all-natural pomegranate juice, premium vodka and a touch of imported tequila.
She put the lime in the coconut, she drank ’em bot’ up …
I can’t get this song out of my head. But seriously, this was such a good idea. It’s like my Cinco de Mayo just went Hawaiian. The result? A delicious lime + coconut margarita that is a little sweet and a little salty and all sorts of refreshing. Serve them up in a coconut shell and close your eyes because it’ll be just like you’re on vacation. :)
We spent the past weekend up in a cabin (in an effort to find some post-holiday downtime and just chill) which resulted in several amazing things: long hikes, snow sledding, making our own dreamcatchers (check them out on Instagram here!), and the development of a wonderful new cocktail.
I was tempted to call it the “Cabin Cocktail” but that really only means something to me. It would make no sense to you. So, let’s call it what it is —a Rosemary Lemon Sparkler.
