We’re a couple weeks into the school year and our house is already buzzing with after-school activities, sports, and jam-packed weekends. This means I have less time to be in the kitchen preparing meals and weekend snack –but that doesn’t mean I still don’t want to serve memorable food. To make it all work, I try to plan quicker meals and get the family to help out in the prep and cooking. This weekend, we all pitched in and made these DELICIOUS chicken and waffle sliders! The chicken and waffle craze is totally legit.
These two-bite chicken and waffle sliders are so easy to make and are perfect to serve a crowd. Use waffle fries for a fun twist on the traditional. were bursting with flavor and a mini meal that we all enjoyed. We used tomatoes and jalapeños growing in our garden which added a nice fresh flavor. Alexia Seasoned Waffle Cut Fries sandwiched slices of breaded chicken, topped with a maple-mayo (don’t skip this part!), fresh tomato, and a slice of jalapeño (which added just the perfect amount of spice). While participating in a cooking challenge at the Pepperidge Farm Puff Pastry Innovation Center, we were inspired by Brazilian appetizers and came up with this play on the traditional monte cristo recipe. It’s made with guava paste which pairs so perfectly with the saltiness of the ham inside. Puff Pastry sheets replaced bread and this buttery, flaky flavor means all of your guests will love these — kids and adults!
I had never worked with guava paste before. It is a really interesting ingredient and added just the right amount of sweetness to this sandwich.
During holiday season, I find myself playing the role of hostesses quite frequently. Although many occasions are planned out far in advance (Thanksgiving, cookie exchanges, Christmas gatherings), there are still those unexpected “pop in” guests and smaller gatherings that can throw any well-prepared hostess off of her game.
Instead of breaking into a sweat every time you hear the doorbell ring (you know… when the neighbors, your in-laws, or friends pop in unexpectedly), follow these entertaining tips & tricks and you’ll be ready to party anytime.
When unexpected guests arrive, you’ll always feel prepared if you keep wine and ingredients for simple appetizers on hand. Here are my tips:
1) Always keep 2 bottles of red wine and two bottles of white wine on hand. That way, when guests pop in you’ll be able to quickly chill your wine and serve them up a drink — no stressing!
2) Keep ingredients on hand for simple appetizers. One of my favorite are these “Martini” kabobs since almost all of the ingredients are jarred and can be stored in your pantry. These include: green olives, prosciutto, cocktail onions, and black olives. Then, just grab a party pick, assemble and you’ll have a great appetizer to serve!
3) Keep supplies like cocktail napkins on hand and invest in a simple set of cocktail plates. At a moments notice you can pull them out and you’re ready to entertain!
