We’re a couple weeks into the school year and our house is already buzzing with after-school activities, sports, and jam-packed weekends. This means I have less time to be in the kitchen preparing meals and weekend snack –but that doesn’t mean I still don’t want to serve memorable food. To make it all work, I try to plan quicker meals and get the family to help out in the prep and cooking. This weekend, we all pitched in and made these DELICIOUS chicken and waffle fries sliders!
These two-bite sliders were bursting with flavor and a mini meal that we all enjoyed. We used tomatoes and jalapeños growing in our garden which added a nice fresh flavor. Alexia Seasoned Waffle Cut Fries sandwiched slices of breaded chicken, topped with a maple-mayo (don’t skip this part!), fresh tomato, and a slice of jalapeño (which added just the perfect amount of spice). Lately, my cravings for all types of popsicles seems to be growing stronger. I’m going to go ahead and blame it on all the delicious popsicle recipes I’ve been spotting on Pinterest. I love that you can combine so many different flavors when experimenting with recipes. Layering different types of juices when making them creates a fun and interesting treat –and you can get creative with flavors AND colors. Check out these striped juice popsicles.
One weekend the Mr. and I were on the road and we popped into a local shop for an ice cream cone. When we both spotted Circus Animal Cookie ice cream …. we started grinning silly. It is one of our favorite childhood cookies, and now in ice cream form? TWO SCOOP PLEASE! In my opinion, there are few things better than these adorably tasty pink and white cookies. And I knew I had to try to recreate this recipe at home. So, it all started with these sprinkle-covered dudes.
This past weekend the family and I escaped for a nice long Memorial Day weekend at one of our favorite places. Filled with sun, water and family — we couldn’t have asked for a better backdrop for an easy, simple, and fun mini-getaway.

The sun was warm (which meant I was in my happy place). It really felt like a kick-off to summer.
Cruisin’ along side the river was in the cards as well.
No long weekend is complete (in my book) without a themed drink! This one was super simple: vodka, cherry 7-up and a few maraschino cherries to garnish. Also, cute straws are a must (these cute pinwheel straws came from Target).
Grilling was a must-do. Simple all-beef hot dogs hit the spot for easy grilling that pleased the crowd. Hebrew National had us covered (and they are the best hot dog in my opinion). Good, simple, food. Plus they are easy to make and everyone is happy. Perfect for summer get-togethers. I love pairing it with a veggie packed spaghetti pasta salad.
Tori’s Summer Spaghetti Pasta Salad
-1 package thin spaghetti
-1 jar Zest Italian salad dressing
-1/2 jar Salad Supreme (look in the spice aisle)
-1/2 large red onion, finely diced
-1 green bell pepper, finely diced
-2 large tomatoes, finely diced
-2 cucumbers, finely diced
Cook spaghetti and toss with bottle of dressing. Finely dice all veggies, put in a large bowl and mix in salad supreme. Combine dressed spaghetti with veggies, nix well. Cover and refrigerate for a few hours (it gets better with time!).
